Paneer Kathi Rolls are the best ones that I have ever made it's even better than the store brought ones. this is a lip-smacking snack to get your hands on! It's a paneer/ cottage cheese with vegetables rolled in a tortilla or with leftover chapattis.

TIPS FOR MAKING THE BEST PANEER KATHI ROLLS.

This recipe is made with fresh ingredients that enhance the flavour of the sauce we make for the paneer stuffing.
Use butter to crisp up the paneer pieces it makes it more flavorful.
Add as many as vegetables you want to make it more healthy.
This paneer stuffing makes around 3 rolls double the recipe for more quantity.
INGREDIENTS FOR PANEER KATHI ROLLS.
PANEER/ COTTAGE CHEESE- You can use fresh hommade panner or storebrought both work absolutely fine for this recipe.
TOMATOES- for the best results you should use red and ripe tomatoes. You can either use crushed or pureed tomatoes. Indian tomatoes works best for this recipe.
ONIONS- In this recipe we use both finely chopped onions for the stuffing and the also for the garnish of the kathi rolls.
CONDIMENTS- For the condiments we use garam masala, chilli powder, haldi powder, and cumin powder to add aroma flavor to the stuffing.
SAUCES- Apply mayonnaise and shezwan chutney on the tortillas or chappatis for more flavour.
TOPPINGS- For toppings add thinly chopped onions, carrots, capsicum and cheese.
STEP BY STEP RECIPE WITH PHOTOS
PREPARATION TIME: 25minutes
INGREDIENTS
1 and 1/2 cup of paneer chopped in 1 inch cubes.
1/2 cup capsicum
1 cup of finely chopped onion
1 cup tomato puree
1 tbsp of cumin powder
1 tbsp of red chilli powder
1 tbsp of garam masala
1 tbsp of haldi
1 tbsp fo ginger garlic paste
2 tbsp of butter
COOKING TIME: 15minutes
STEP1: In a pan add 2 tbsp of butter, Let it melt completely add the panner cubes and roast them until golden brown.
STEP2: Once the panner is done remove it from the pan and keep it aside, in the same pan with the rest of the butter add 1 cup of finely chopped, 1tbsp of ginger garlic paste, 1 tbsp of haldi, 1 tbsp of redchilli powder, 1 tbsp of garam masala, 1tbsp of salt, and 1 cup of tomato puree mix until it is combined.
cook for 3-4 minutes.
STEP3: Once the mixture is ready add the finely chopped capsicum. if the mixture is thick add 2 tbsp of water, add 1 cup of roasted paneer cubes and mix well. the filling for the paneer kathi roll is ready!
FOR THE ROLL
STEP4:Take a tortilla or a chapatti apply 1 tbsp of mayonnaise and shezwan chutney, add the panner filling and add the topping of your choice, here i have add thinly chopped onion nd carrots and some gratted cheese . tightly roll so that the filling does not fall out.
Voila your panner kathi rolls are ready!
